Possible? Own Spam Security: Captcha + Honeypot field in Inquiry form?

Due to data protection (privay policy / GDPR) we can no longer use Recaptcha. Is it possible to use an own spam protection consisting of a question (e.g. how many letters does the word have) and a hidden field / honeypot (if this is filled in, the form is not sent) in the Inquiry Form?
