Where is the language file for translating the fields including custom fields?

Hi,

I want to change some of the field names (language) for the Advanced Search module for example from:

-- Select Country --

to

-- Select Region --

I checked the locale/eng/default file but these values are not there (I was going to add them to my template jreviews override file as that is what we should do?). 

Where are the files located that we use to change the field language strings?
