Is it possible to pre select field options in Advanced Filtering Module?

In the Advanced Filtering Module is it possible to pre select a field option, and hide the field option, for example with

[filter name="jr_cuisine" label="Cuisine" display_as="checkbox"]

I want to hide the option Asian, but still include it as checked, If I can't hide it I could show it as long as it remains checked.
