Displaying output of checkboxes/multiple select as a table

I'm looking to create a table for a listing that would display a short range of specific dates (in this case, Christmas week) and ticks or crosses to see whether something was available on that date. 

E.g. something like this:

I think I know how to set up the field and options - but am struggling on how to output this on the site. Is there a code for the output that can specify to display a particular field option, or is the best way to achieve this to create multiple fields?
